Ingredients:
Pancake mix:
100g oat flour (if you don't have oat flour, just blend oats)
1 ripe banana
50 g of tofu (will work without it as well)
30g of your favorite protein powder (vegan brown rice protein powder was used here)
dash of cinnamon
a pinch of salt
200ml of rice milk
For the topping:
handful o frozen (or fresh) blueberries
100ml of rice milk
agave nectar (could be maple syrup or just stevia)
cocoa powder (optional, if you wanna make it more chocolatea)
Directions:
Blend all ingredients together until the mix is silk smooth and well-combined. Heat a lightly oiled pan and pour or scoop the batter onto the griddle. Then brown the pancakes evenly on each side.
For the topping, pour milk into a pot over low heat. Add blueberries, agave nectar and let simmer for 2 minutes. Enjoy your guilt-free treat!
