Vegan Stuffed Cannelloni
What about being more creative with your pasta? Take a break from spaghetti and try these delicious stuffed cannelloni with tofu, herbs and delicious tomato sauce.
Ingredients:
8 pieces of cannelloni
Filling:
300g of tofu
1 medium onion
2 cloves of garlic
3 tbls of nutritional yeast
hanful of fresh fresh basil leaves
hanful of spinach
lemon juice from a half of lemon
salt and pepper
Tomato sauce:
1 can of tomato puree
fresh basil leaves diced
1 medium onion diced
salth and pepper
Directions:
Add all the ingredients for the filling into the blender and blend up lightly. Don't over blend. Fill the cooked cannelloni with the mixture and place in a baking dish.
Saute the onion for 5 minutes, add tomato puree and basil.
Season with salt and pepper and pour over the stuffed cannelloni and bake at 200C for about 30 mins. Sprinkle with nutritional yeast and fresh basil leaves.
