Spring salad

 

Do you need something to buck you up? Check this easy and delicious salad we are bringing you!

 

Ingredients 

Spinach leaves
Avocado
Tomatoes
Eggplant
Shrimps or chicken 
Some garlic

Dressing

 

2 tbs of Olive oil
2 tbs of Lemon juice
5 tbs of White plain yoghurt
1/2 tbs of Salt
1/4 tbs of Pepper

The amount of ingredients depends on your preferences and discretion.

 

Directions

 

Put spinach leaves and peeled and cut avocado in a bowl together with cherry tomatoes. Then cut the eggplant on slices and roast them on a pan. Then add them to the salad together with roasted shrimps or chicken. To do so, crush the garlic and put it on an olive oil in a pan and then add the shrimps or chicken. Fry for 2 minutes and you're done. Then prepare the dressing by mixing all ingredients together. Add to the rest and mix
