Rucola Salad with Macaroni

 

Ingredients


250g wholegrain macaroni
120 g rucola 
10 dried tomatoes 
120 g fresh tomatoes
1 red bell pepper
100g feta cheese
100g black olives 
balsamic vinegar 
olive oil 
1/2 teaspoon of salt 
pepper 

 

Directions


First cook the macaroni, drain them and cool them down. Add rucola, chopped tomatoes,red pepper and black olives. Mix all the ingredients together and crumble some feta cheese on top. Add balsamic vinegar, olive oil, salt and pepper. You can serve this delicious salad!

post 6pm: Healthy Snack with Avocado and Goat cheese
Ingredients: wholegrain bread, homemade guacamole, beet, goat cheese and rucola.
