Pumpkin Soup

Ingredients

 

1 onion
100 g leek
500 g pumpkin
700ml vegetable stock
2 teaspoon of Coconut oil
Handful pumpkin seed
Pumpkin oil for garnish
Pinch of salt
Pinch of pepper

Directions

 

Heat 2 tbsp of Coconut oil in a pot , then chopped onion and leek. Cook for 5 min, until it’s soft. Add chopped pumpkin to the pot and then carry on cooking for 8 -10 min, stirring occasionally until it starts to soften. Pour vegetable stock into the pot, season with salt and pepper, bring to the boil. Cook it all about 15-20 min. A soon as the pumpkin is soft and tender that it can easily be mashed with a hand blender. 
Serve the soup with the pumpkin seed and Pumpkin oil for garnish.
