Potato Tortilla (Tortilla de papas)
A simple dish to prepare and to impress with! Something to add a little exotic feel to a dish of potatoes



Ingredients
5-8 potatoes (depending on the size of your pan)
1/2 onion
5 eggs
parsley
salt
cooking oil
Directions
Peel the potatoes and cut them into little dice, cut half of the onion into fairly small pieces.
Fry the pieces of onion in a considerable amount of oil until they start to get crispy and add the potato dices. Fry the potatoes until they are soft and the edges start to get brown, should be around 10 mins.
In the meantime crack and stir the eggs and add parsley to the mix.

Once you’ve drained the oil from the pan pour the egg-parsley mix on top of the potatoes and even it out on the whole pan. At this point add the salt to the mixture.

Cook the whole thing at a very hot temperature for a couple of minutes on each side until it looks somewhat like an omelette and voila you’re done!

The dish can be enjoyed hot or cold, for example as a side dish to cold cuts.
