Lactose-Free Creamy Pie Soup

Ingredients

 

300g frozen peas
200ml lactose-free milk
200ml lactose-free cream
500ml vegetable broth
1 big leek
1 onion
50g of butter

 

Directions

 

Cut the onion and white part of the leek into small pieces and lightly fry them on the butter. In the meantime, make a vegetable broth. When slightly golden, add the peas and mix it together. Pour the broth into the mix and boil it all together for 3 minutes until the peas soften up. 

Take it off the heat and use hand mixer to puree the content in our pot. Afterwards, add the lactose-free milk and cream (be cautious the pot should be taken off the heat beforehand). Take out a new pot. Use sifter to filter the soup into a creamy and consistent puree. Take the new pot with the puree and warm it up a bit so we get back the original broth temperature. Now, the soup is ready to be served. It tastes delicious with caramelized peas and pumpkin rye bread.
