Eggplant Rolls

Ingredients

 

1 big eggplant 
1 garlic clove
2 tbs of mayonnaise 
Vegetable oil
Salt
Pepper

 

 

Directions

 

Peel the eggplant and cut it lengthways in a thickness of 1 cm each. Salt the pieces from both sides so the eggplant gets rid of bitterness. Leave it for 20 minutes. Then wash them thoroughly sprinkle salt and pepper over each one. Heat a pan and add vegetable oil. When it is heated fry each piece of eggplant til they are soft and brownish. In a small bowl mix the mayonnaise and grained or chopped garlic cloves. Spread the mayonnaise with garlic on each piece of eggplant and roll it.
